Following reviews of Hello Fresh and Marley Spoon, the next receipe box delivery company we’re looking into is the “UK’s favourite recipe box company“, Mindful Chef.
Pitched as “The Healthy Recipe Box Company”, Mindful Chef offer two styles of recipe box – Classic and Plant-Based, for vegans. For this review, we were sent a Classic Box, with ingredients for two recipes. Firstly, a Red Thai chicken curry with courgetti & cashew nuts. The second recipe is Beef & mustard burger with balsamic onions & rosemary carrot fries. This review is going to chiefly focus on the former.
Red Thai chicken curry with courgetti & cashew nuts
When it arrives, the box has a chilled section which has kept the chicken safely stored. Everything looked wonderfully fresh and, considering the journey it’s taken, in great condition. The recipe guide is incredibly simple. Basically, chop / slice it all up.
That small glass bowl on the right has the red Thai curry paste, which kicks things off. Fry it in oil and then add the chicken, peppers and mushrooms. The moment you add the red Thai curry paste, the smell in the kitchen is amazing.
Once the coconut milk goes in, you’re flying. The contents of the bubbling pan looks special. Not it’s time to peel the courgette and chuck them into a pan with a little oil for cooking. And that’s it!
It looks and tastes great and, as the description above shows, was incredibly simple to make.
We also made the Beef & mustard burger with balsamic onions & rosemary carrot fries, which made gigantic burgers. The mushrooms were noticeably fresh and good quality. The rosemary left the carrots with a deep, marvellous taste. Similarly, when frying the red onion in the balsamic vinegar, the smell is lovely. The end result was satisfying.
The selection is reasonably priced. To order, you visit the Mindful Chef site and let them know how many recipes you want (up to four) and whether it’s for 1 or 2 people. Boxes are delivered on a Sunday or Monday – you pick which.
For the two meals above for two people, you’d pay £28 including delivery, which is slightly less than their competitors. The food is fresh, good quality and tasty. Mindful Chef may be a smaller company than the other options, but – based on what we received – definitely worth checking out.
